What's For Dinner: Winter Steak, Soul Food, and Casserole

This week on What’s For Dinner? we’ve put a winter twist on a Tuscan classic, served up some soul food, and looked at the immunity boosting value of beef and lamb.

A Twist On A Tuscan Classic

We've had another cold week and that means we've leaned into some of the heartier recipes on our website, such as our recipe of the week, this amazing Steak and Winter Pumpkin Panzanella. The recipe looks to give the classic Italian Panzanella, or bread salad, a winter makeover by swapping out tomato for roast pumpkins. It's packed full of flavour and makes a great dinner or lunch. If you're looking to pack some extra flavour into the recipe we'd recommend adding 1/4 a cup of pitted olives, 1 tablespoon drained capers and 2-3 chopped anchovy fillets.

Soul Food Month

Soul food was born from the concept of creativity; doing the best that you can with what you have, and June is Soul Food Month! Therefore, this month we are embracing the rich, flavoursome and comforting American culinary heritage by using our New Zealand beef and lamb to make and recreate some of our favourite Soul Food dishes.
