WHAT'S FOR DINNER: Recipes for a winter weekend

This week on What’s For Dinner? you can indulge in a warming beef and lentil taco soup and wonderful winter roasts. Food Writers New Zealand share their first charity-supporting recipe collection, and we introduce you to the Beef + Lamb NZ Community Fund.

The taste of Mexico in a soup

Why always have tacos the same way when you can make slow-cooked beef, black beans and corn into a warming winter soup with some added Mexican heat from jalapeño and chili powder! Top with plenty of cheese and maybe a dollop of sour cream and serve with toasted bread or corn chips for dipping.

Cooking tips: This soup is even more delicious the next day after the flavours have developed further. It also freezes well.

40 roasts for winter weekends

Roasts are not only a long-standing Sunday tradition, but also a wonderful treat when it's cold outside, and a great way to prepare food in advance. You can enjoy a delicious beef or lamb roast with the family or slice it up, freeze in portions and pull out when you're time-poor. This way, a large cut of meat can go a long way.

Get cosy in the kitchen this winter

The amazing Food Writers New Zealand have been working hard over lockdown to produce their first-ever e-book Cosy. It contains 40 achievable, family-style winter recipes as well as a series of thought-provoking food stories from Kiwi food writers. It costs just $10 and all proceeds will be going to Meat The Need NZ, which provides much-needed mince directly to food banks.
