Juicy lamb for Easter

While this Easter will be a strange one with each of us limited to our bubble and a level of uncertainty about the future, it's good to know that there are still familiar things around like our New Zealand lamb. Treat yourself to a good meal this Easter and try this roast lamb recipe. The lamb cooks on a bed of potatoes and leeks which allows the flavours to infuse together beautifully. This will go well with roast new potatoes and a fresh salad!

Cooking tip: Basting the lamb will keep it moist during roasting. We love using leftover lamb in sandwiches or salads the next day.
