Five Perfect Steak Sauces
We love steak (a lot) and if our site statistics are anything to go by so do you. There’s no denying the importance of matching your meat with the perfect sauce. The team here at beef and lamb have created five speedy sauces that are as tasty as they are quick to make.
Green Herb Dressing
Place a cup of flat leaf parsley leaves, a cup of coriander leaves, 2 spring onions (trimmed and roughly chopped), 1 clove of garlic (roughly chopped), finely grated zest of 1 lemon, 1/2 tsp of cumin, and a pinch of red chilli flakes in the bowl of a food processor. Process to roughly chop the herbs. While the processor is on, drizzle in the olive oil followed by the vinegar. Season with salt and place dressing in a small screw top jar. Keep in the fridge.
Finely chip ½ a cup of fresh coriander and ½ a cup fresh oregano, then crush 2 cloves of garlic. Combine with a ¼ cup of oil and 2 teaspoons white or red wine vinegar. Mix well (use a processor if you have one). Taste and season as required.
Zesty Tomato Salsa
Quarter 1 punnet of ripe cherry tomatoes, finely chop 4 pieces of sun-dried tomato and 2 tablespoons of red onion, chop 2 tsp of fresh oregano or thyme, and crush 1 clove of garlic. Combine in a bowl with 1 tablespoon of capers and 1 tsp of red or white wine vinegar. Let the ingredients sit for at least half an hour to allow the flavours to infuse before serving with cooked steak. Season with salt before serving.
Ready in 15 minutes, this piquant Italian green sauce doesn’t actually require any cooking. Chop a small bunch each of parsley, chives and mint into small pieces and mix in a bowl with 1 tsp capers, 2 or 3 chopped anchovies, 1 crushed garlic clove, the juice of 1 lemon and 3 tbsp olive oil. Mix well and season to taste.
Mustard, Garlic & Herb Cream
Add 1 cup of cream, 2 tablespoons of wholegrain mustard, and one crushed clove of garlic in a small saucepan and bring to the boil. Immediately reduce the heat and simmer gently until the cream has reduced by half, then add 2 tablespoons of fresh chopped herbs (chives, parsley, coriander). Taste and season as required.
