National Lamb Day 2018 was our biggest yet, with a giant chop travelling the length of the country and support for this iconic dish coming in from far and wide. In true supporting fashion, all in the office celebrated in one way or another. With some of us attending Kate Fays lamb degustation dinner at Cibo, whilst many of us also enjoyed a home cooked lamb dish  inspired by recipes from

All had rave reviews, from the delicious Indian Spiced Lamb Shanks, or the Lamb Cutlets with Quinoa Crust, to one lucky guy enjoying New Zealand lamb in Fiji to celebrate the momentous occasion. The dedication flowed through to dessert with lamingtons served up to some lucky kids for dessert. Yum!

For National Lamb Day, I wanted to try a new recipe from the latest issue of mEAT Magazine.  I spotted the Lamb and Chickpea Stew which uses lamb shoulder chops.  This cut of lamb is so flavoursome, however I usually pan fry or roast them so was curious to try them in a stew.  The chickpeas added that lovely nutty texture and with all the vegetables added into the casserole dish this was such an easy one-pot meal which provided a tasty wintery bowl of comfort food for the whole family.  The chops came out meltingly tender and this is now going to be one of my new go-to recipes for the cooler months ahead.
